Homemade Grilled Sardine Salad

This incredibly tasty sardine salad takes literally minutes to make. I enjoyed it so much when I mixed it up yesterday I thought I’d share the recipe…

Ingredients:

  • 1x tin of Brunswick Canadian Style Sardines with Hot Peppers
  • 1x small pot of Mixed Olives with Sundried Tomatoes (via Sainsbury’s Olive Bar)
  • 2x 75g bags of Sainsbury’s baby leaf Watercress
  • 1x 70g bag of Sainbury’s baby leaf Lambs Lettuce
  • 150g of Halloumi cheese
  • White wine vinegar
  • Half a small lemon
  • Olive oil
  • Garlic Powder
  • Salt

Preparation:

  1. Take a large serving bowl and throw in the watercress and lambs lettuce (I snipped around the bowl with scissors to break up the leaves and stems but you can just as easily use your hands to tear it up.)
  2. Chop and mix in your olives, tomatoes & halloumi cheese.
  3. Drizzle on olive oil and a splash of white wine vinegar
  4. Sprinkle a generous amount of garlic powder, salt and a squeeze of your lemon to taste
  5. Mix well and set aside whilst you set your sardines on the grill. (NB: Scoop out gently as they can break up quite easily)
  6. Once you have a nice crispy coating going on with your sardines, scoop your salad into individual portions and serve with your crispy sardines on top.

Words can’t express how thoroughly tasty this was. Think a boiled egg could go quite nicely with this too, either way if you make it let me know how you get on! x
